These morsels of parmesan and smoked cheese goodness make the cruciferous crusader cauliflower work deliciously as a snack or side dish.

What you need

  • 2 medium heads cauliflower, cut into florets
  • 1/4 cup small diced onion
  • 1/2 cup Mainland Smoked Cheddar Cheese, grated
  • 1/2 cup grated Perfect Italiano Parmesan Cheese
  • 1/4 cup breadcrumbs
  • 1 large egg

Here's how it's done

  1. Pre-heat oven to 190°C. Spray a non-stick baking tray with cooking spray or lightly grease with oil.
  2. Steam cauliflower in hot water for five minutes or until nice and soft, drain and blend in a food processor.
  3. In a medium bowl, combine all ingredients and season with salt and pepper to taste.
  4. Spoon a tablespoon of mixture in your hands and roll into oval shaped tots. Place tots on baking tray and bake for about 20 minutes, turning halfway through until golden.
  5. Serve with yoghurt or sweet chilli sauce.
