What you need

  • 1 punnet cherry tomatoes, halved
  • 1 avocado, diced
  • 2 cups leftover roasted chicken, diced
  • 200g Kapiti Kikorangi, diced
  • 75g rocket,
  • 1/4 cup Italian parsley, chopped

Dressing

  • 60ml extra virgin olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp basil pesto

Here's how it's done

  1. Combine salad ingredients in a large shallow bowl. Toss to combine.
  2. In a jar, shake the dressing ingredients together.
  3. Pour over salad and toss gently to coat, serving immediately.

Serving Suggestions

For even more flavour, try adding toasted croutons, roasted walnuts, roasted new potatoes or replace tomatoes with honeydew melon.
