& Feta Fritters

A lazy Summer brunch beckons. And this unexpected fritter combination of zucchini, parmesan and feta cheese is tipped to be the star attraction.

What you need

  • 3 courgettes
  • 1/2 cup self-raising flour
  • 1 egg, beaten
  • 1/4 cup Perfect Italiano Parmesan cheese
  • 1 fresh chili chopped or pinch of dried chili (add more if you like it spicy!)
  • 1/4 cup mint leaves, chopped
  • Sea salt and freshly ground pepper to taste
  • 2 Tbsp Mainland Original Butter
  • 50g Mainland Special Reserve Creamy Feta, crumbled

Here's how it's done

  1. Grate courgettes into a bowl.
  2. Add flour, egg, parmesan, chili, mint, feta, salt and pepper.
  3. Mix together until everything is combined.
  4. Put a non-stick frying pan on medium heat and add the butter.
  5. Cook spoonfuls of the batter in batches until golden on each side.
  6. Serve with bacon and tomato sauce, or with salad and lemon wedges.
  7. Also great as a side for a BBQ, in a picnic or in kids’ lunches!
