What you need

  • 100g Mainland Special Reserve Blue Cheese Blue Vein Cheese
  • 25g Perfect Italiano Shredded Parmesan cheese
  • 150g Mainland Original Butter
  • 225g Flour 
  • A pinch of chilli flakes
  • 30ml Anchor Blue Milk

Here's how it's done

  1. Combine and pulse all the ingredients except the milk in a food processor.
  2. Add the milk and pulse until the mixture forms a soft dough. 
  3. Using a teaspoon, take spoonfuls and roll into balls. Flatten onto a lined baking tray with the back of a fork. 
  4. Bake at 180°C for 10 to 15 minutes until golden.

Serving Suggestions

125g Anchor Cream Cheese Spreadable, 1 tsp wholegrain mustard, 1 tsp horseradish sauce, 1 tbsp lemon juice, 250g hot smoked salmon (optional), 1 avocado – sliced.
Mix together the cream cheese, mustard, horseradish and lemon juice. If using, fold in the salmon and mix lightly to combine. Place spoonfuls of the cream cheese mixture on top of the blue cheese biscuits and top with a slice of avocado.
