Delicious Grapefruit Bars Recipe
Our moreish homemade grapefruit slice recipe

This recipe is an assault of flavours and textures. The base has a satisfying crunch but the real hero is the gooey and moist grapefruit topping. Great as a morning tea time treat, or serve with a dollop of yoghurt for a refreshing dessert.

What you need

Base

  • 150g Anchor unsalted butter, softened
  • 1 cup flour
  • 1/2 cup icing sugar

Topping

  • 4 eggs
  • 2 tsp finely grated grapefruit rind
  • 1/3cup flour
  • 1 1/3 cups caster sugar
  • 2/3 cup freshly squeezed grapefruit juice

To Serve

  • Icing sugar
  • De Winkel Plain Unsweetened Yoghurt

Here's how it's done

  1. Preheat oven to 180°C. Grease a 3cm-deep, 16cm x 26cm slice pan. Line base and sides with baking paper.
  2. In a food processor mix the butter, flour and icing until it forms a soft dough around the blade. Press into the base of the tin and bake for 20-25 minutes until lightly golden. Allow to cool slightly. 
  3. Make topping by whisking eggs, grapefruit rind, flour and sugar together until smooth. Add juice. Whisk to combine. 
  4. Pour over base and bake for 15 minutes or until just set. 
  5. Cool completely in tin then dust with icing sugar and slice.

Mix it up

If grapefruit aren't in season try imported ruby grapefruit instead. They will add a lovely pop of colour over summer. Or, if you like a bit more of a citrus bite you can substitute half the grapefruit juice with lemon juice.
