Yoghurt & Honey Pikelet Pile-up

What you need

  • 2 large eggs
  • 4 Tbsp Anchor Blue milk
  • 2/3 cup De Winkel All Natural Plain Unsweetened Yoghurt
  • 2 Tbsp runny honey
  • 3/4 cup self-raising flour
  • Anchor Butter for cooking

To serve

  • De Winkel All Natural Plain Unsweetened yoghurt
  • Runny honey
  • Fresh berries

Here's how it's done

  1. Whisk together eggs, milk, yoghurt and honey. Add flour and whisk to combine.
  2. Heat butter in a nonstick pan over medium heat. Use a dessert spoon to drop batter onto the pan and cook one to two minutes on each side until golden. Place each batch in a teatowel to keep them warm.
  3. When you’re ready to serve, place a spoonful of yoghurt between pikelets to make stacks and secure with toothpicks and fun skewers. Drizzle with yoghurt and serve with your favourite berries. 

Mix it up

For a savoury vibe, omit the honey and top with smoked salmon and Anchor Traditional Cream Cheese.
