Cinnamon French Toast Bacon Butties Recipe

French toast is weekend brunch perfection, especially when you add crispy bacon. This recipe is the perfect treat for special occasions or when you’ve got guests you want to impress.

What you need

  • 2 eggs
  • 180ml Anchor Blue Top Milk
  • 1 Tbsp caster sugar
  • 1 tsp cinnamon
  • 4 slices thick cut sourdough bread
  • 2 Tbsp Anchor butter
  • 6 rashers streaky bacon, grilled

To serve

  • Seasonal fruit
  • Maple syrup
  • Icing sugar

Here's how it's done

  1. Whisk the eggs, milk, sugar and cinnamon in a bowl. Soak the sliced bread in the mixture.
  2. Heat 1 tablespoon of the butter in a non-stick frying pan and fry two slices of sourdough on a low–medium heat until golden and crisp (about 3–4 mins each side).
  3. Remove from the pan and sandwich 3 slices of bacon between the slices of French toast. Repeat with the remaining soaked bread to make the other sandwich. 
  4. Serve with your favourite seasonal fruit, a drizzle of maple syrup and a dusting of icing sugar.

Serving Suggestions

Serving suggestion: This recipe is simple to double or triple if feeding a crowd. The French toast mix can be made up to an hour ahead and kept in the fridge.
