A fruity pancake recipe

This healthy twist on a classic pancake breakfast is so delicious with a sprinkle of blueberries – the kids will never know it’s so good for them!

What you need

  • 1 peach or other stone fruit, sliced
  • 1 medium banana, sliced
  • 1 cup rolled oats
  • 1/2 cup blueberries
  • 1 tsp baking powder
  • 200g Anchor Uno Peach & Mango Yoghurt
  • 1 tsp cinnamon
  • 3 eggs
  • 2 Tbsp milk

Here's how it's done

  1. Pre-heat pan over medium heat and coat with cooking oil.
  2. Add ingredients to blender in the order listed and blend until oats are broken down and batter is frothy.
  3. Using a ladle, pour batter into pan and sprinkle with fruit.
  4. Cook until bubbles start to form on top, about one - two minutes. Flip over and cook for about two more minutes.
  5. Repeat with remaining batter, ensuring to coat your skillet again with oil between each batch.
  6. Serve hot and enjoy with your favourite toppings.
