What you need

  • 2 ripe avocados
  • 250g tub Perfect Italiano™ Ricotta
  • 1 lemon, zest and juice
  • Handful parsley leaves, chopped
  • Salt and pepper, to season
  • Parmesan pita crisps, to serve

Here's how it's done

  1. This couldn’t be simpler. Remove seed and scoop out flesh into a food processor. Add ricotta, lemon zest and juice, parsley and blend.
  2. Season the way you like, with salt and pepper.
  3. Serve straight away, with plenty of parmesan pita crisps.
