Butternut, Ginger & Lime Mash Recipe
Our simple butternut mash recipe

Here’s a delicious twist on a seasonal favourite, our pumpkin mash recipe. Sweet creamy butternut gets a burst of flavour with lime and a little kick of ginger.

What you need

  • 150g Anchor Original Butter 
  • 50g piece of ginger, finely grated
  • 2kg butternut, peeled, seeded, cut into 5cm pieces
  • Zest of 2 limes 
  • Sea salt & pepper

Here's how it's done

  1. Melt butter in a pan over medium heat. Add ginger and stir until fragrant (about 2-3 minutes). 
  2. Add pumpkin, 200ml water, and season to taste. 
  3. Cover and simmer until pumpkin is soft (25-35 minutes). 
  4. Add lime zest then coarsely mash with a fork or potato masher.

Serving Suggestions

Serve this healthy and hearty side dish alongside steamed green beans and roast NZ lamb.
