It’s impossible to resist these ooey, gooey, mini cheese puffs. Better make a double batch!

What you need

  • 2 1/2 cups Perfect Italiano Mozzarella, grated
  • 1 cup Perfect Italiano Parmesan, grated
  • 2 eggs
  • 4 Tbsp plain flour
  • 1 tsp baking powder
  • Sunflower oil, for frying

Cheat's aioli

  • 1 cup good quality mayonnaise
  • 1 clove garlic, crushed
  • 1/4 cup olive oil
  • 1 Tbsp fresh lemon juice
  • 2 tsp paprika
  • Sea salt and freshly ground black pepper

Here's how it's done

  1. Chuck everything in a bowl. Mix well until the mixture holds together, then get your hands in there and shape teaspoonfuls into small balls.
  2. Fry them in hot oil until golden brown (they will almost double in size). You should have enough oil to pretty much cover them. Drain on paper towels.
  3. For the aioli, whisk all ingredients together and chill. This can be made two days in advance.
  4. Serve on their own as a snack or as part of an antipasto platter.

Serving Suggestions

Make an impressive antipasto platter using anything in the fridge! For salty, use plenty of meats like ham and salami, cheeses like brie, feta or a smoked cheddar, as well as plump olives. Dips like Annabel's Feta Whatever also go a treat. For sweet, a combination of dried fruits, sun-dried tomatoes and plum chutney. For sour, plenty of pickles and marinated artichoke hearts. For spicy, hot salami and spiced nuts.
