These melt-in-your-mouth cheesy biscuits are ideal for entertaining, and they’ll keep crisp for a week in a sealed container.

What you need

  • 100g (just under 3/4 cup) plain flour
  • 100g butter, chilled and diced
  • 100g Mainland Noble Cheese, grated
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 Tbsp black sesame seeds, to garnish (optional)

Here's how it's done

  1. Pulse all ingredients except the sesame seeds in a food processor until the mixture starts to form a ball. Shape into a log about three to four centimetres in diameter, wrap in plastic wrap and chill for at least 30 minutes.
  2. Preheat oven to 150˚C fanbake and line two oven trays with baking paper. Cut log into one centimetre thick slices and spread out on trays. If desired, sprinkle sesame seeds over the top, pressing lightly to help them stick.
  3. Bake until golden (25 to 30 minutes). Allow to cool on trays before storing in an airtight container for about a week.

Serving Suggestions

This cheesy dough also makes a crisp base for open-form tarts. Cut three centimetre thick slices from the dough log and roll them out to about 10 millimetres in diameter. Bake in a 170˚C fanbake oven until golden, and when cool spread with flavoured ricotta and top with salad greens, halved cherry tomatoes, roasted peppers and a few olives.
